Chicken Taco Lettuce Cups


A few lettuce leaves

Leftover chicken

2 tbsp black beans

1 tbsp salsa

1 tbsp of organic cheese

Fill a lettuce leaf with some leftover chopped chicken breast and 2 tablespoons black beans (warmed). Top with 1 tablespoon salsa and 1 tablespoon reduced-fat shredded organic cheese.

Put all this together and you’ve got yourself a healthy balanced snack, that kids can easily assemble at school, or if your prefer, simply put it all together at home and wrap individual tacos with half size pieces of paper towel.

Don’t forget that a balanced snack makes for balanced blood sugar, which will give you a balanced mood and happy kids!
